Updated dependencies

WE2-1276

• Updated various dependencies
• Add a dependency override for js-yaml coming from load-nyc-config, as the package has not been updated in 6 years and uses js-yaml version that contains a security vulnerability
• Changed usage of archiver package as there were breaking changes in v8.0.0
• Switched from @stylistic/eslint-plugin-ts to @stylistic/eslint-plugin as that is now the officially maintained version of the package (and still TS)
