Adds a dedicated 'Opting out of app auto-updates' section (plus TOC entry and a cross-link from the auto-update callout) to the app-store docs page explaining how to set APP_UPDATE_OPT_OUT=true to pin installed apps, and how to switch app updates back on. Documents the systemd/launchd env placement and the truthy values, matching the pilotprotocol updater behavior.
