docs: add Mintlify documentation site - #1

Full docs site with a custom landing page, brand logo and hero mark, plus root scripts and Zed workspace settings. README is trimmed to a short overview that links into the site. Thanks to Mintlify for their open-source program and for the access that made this documentation site possible.

Adds a full Mintlify documentation site under
docs/: 22 pages (introduction, quick start, configuration reference, CLI, guides, exports), a custom landing page, brand logo/favicon/hero mark, anddocs:dev/docs:validate/docs:check-linksscripts at the root.docsjoins the pnpm workspace, and a.zed/workspace config is included.README is trimmed from 638 to 111 lines — an overview, quick start, and links into the site.
Docs links currently point at
