docs: use pgsty/silo image in MinIO example - #784

quay.io/minio/minio now requires authentication and minio/minio is gone from Docker Hub, so the docker command in the MinIO example no longer works. Point it at Silo, a community-maintained fork of the MinIO server with the same CLI, default credentials and web console. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>

The MinIO example (docs page and
examples/minio/README.md) tells users to runquay.io/minio/minio. That image no longer works: MinIO has stopped distributing a public community image, soquay.io/minio/minionow requires authentication andminio/miniois gone from Docker Hub.This switches the
docker runcommand topgsty/silo, a community-maintained fork of the MinIO server, and adds a sentence explaining why. The rest of the example still applies. Silo takes the sameserver /data --console-address ":9001"arguments, still defaults tominioadmin/minioadmincredentials, and ships a web console you can create the bucket from.This is the docs follow-up to #783, which makes the same switch in the test fixture. The example leaves the image unpinned because it's meant for users to copy, not for reproducible CI.
