Docs: Add mercury-2 model documentation to Inception provider page

Summary

The Inception Labs provider documentation needs to be updated to include details about the mercury-2 model that was added in PR #12156.

What needs to be documented

• mercury-2: 128k context window, tool calling support
• mercury-edit-2: Edit model variant
• mercury-coder-small: Smaller coder model variant

The current Inception docs at docs/customize/model-providers/top-level/inception.mdx are generic and don't mention specific models or their capabilities.

Suggested changes

1. Add a section listing available models with their capabilities
2. Document tool calling support for mercury-2
3. Update example configurations to show mercury-2 specifically
